What is biryani?

Biryani is a type of meat made by marinating vegetables, such as carrots or mushrooms in spices and usually using saffron leaves to preserve the flavor. The vegetable pieces are then smoked on an open flame for about 15 minutes until tender. Because this technique requires less effort than cooking conventional chicken breast with rice, it's seen as healthier because you're conserving calories instead (and saving money).

Ingredients:

  • 1.5 cups basmati rice, soaked for 30 minutes and drained

  • 2 tablespoons ghee or oil

  • 1 onion, sliced thinly

  • 1 teaspoon ginger paste

  • 1 teaspoon garlic paste

  • 1 green chili pepper, chopped

  • 1 cup mixed vegetables (peas, carrots, potatoes, etc.)

  • 1 teaspoon cumin seeds

  • 1 teaspoon coriander powder

  • 1 teaspoon garam masala

  • 1/2 teaspoon turmeric powder

  • Salt, to taste

  • 1 cup water

  • 1/2 cup yogurt

  • 1/2 cup chopped mint leaves

  • 1/2 cup chopped cilantro leaves

  • 2 tablespoons fried onions (optional)

  • Saffron, soaked in milk (optional)





Instructions:


  1. Add the ginger paste, garlic paste, and green chili pepper to the pot and fry for 1-2 minutes.


  2. Add the cumin seeds, coriander powder, garam masala, turmeric powder, and salt to the pot and fry for 1-2 minutes.

  3. Add the soaked rice to the pot and fry for 2-3 minutes, stirring occasionally.


  4. In a small bowl, whisk together the yogurt, mint leaves, and cilantro leaves.

  5. Once the rice is cooked, remove the pot from the heat and let it rest for 5 minutes.

  6. Add the yogurt mixture to the pot and mix it gently with the rice.

  7. Garnish with fried onions and saffron soaked in milk (optional) before serving.

Your biryani is ready to serve!

  • 1.5 lbs. chicken, cut into pieces

  • 1.5 cups basmati rice, soaked for 30 minutes and drained

Beef Yakhni Biryani is a flavorful and aromatic Pakistani dish that combines tender beef, fragrant spices, and long-grain basmati rice. Here's a recipe to make it at home:

Ingredients:

For Yakhni (Beef Broth):

  • 1 kg beef bones

  • 1 onion, sliced

  • 2 garlic cloves

  • 1-inch piece ginger

  • 1 cinnamon stick

  • 2 black cardamom pods

  • 3 green cardamom pods

  • 3 cloves

  • 1 tsp black peppercorns

  • 1 bay leaf

  • Salt to taste

For Biryani:

  • 1 kg beef, cut into small pieces

  • 2 cups basmati rice

  • 2 onions, sliced

  • 4-5 green chilies, chopped

  • 1 cup yogurt

  • 1 tsp ginger paste

  • 1 tsp garlic paste

  • 1 tsp cumin seeds

  • 1 tsp coriander powder

  • 1 tsp garam masala powder

  • 1 tsp red chili powder

  • 1/2 cup oil

  • Salt to taste

Instructions:

  1. To prepare yakhni, wash the beef bones and put them in a large pot along with sliced onions, garlic cloves, ginger, cinnamon stick, black and green cardamom pods, cloves, black peppercorns, bay leaf, and salt. Reduce the heat and let it simmer for 2-3 hours until the broth is flavorful.

  2. Reserve the yakhni for later use.

  3. Rinse the basmati rice several times until the water runs clear. 

  4.  Add beef and fry until the meat changes its color.

  5. Add chopped green chilies, ginger paste, garlic paste, cumin seeds, coriander powder, garam masala powder, red chili powder, and salt to the beef. Stir well to combine.

  6. In a separate bowl, whisk the yogurt until smooth and add it to the beef mixture. Cook on medium heat until the beef is tender and the mixture is thick and aromatic.

  7. In a large pot, add soaked rice, yakhni broth (around 4 cups), and salt to taste. Bring to a boil and reduce the heat to low. Cover the pot and let it simmer until the rice is cooked and the liquid is absorbed.

  8. In a separate pot, spread a layer of cooked rice at the bottom. Add a layer of beef mixture on top of the rice. Repeat the layers until all the rice and beef mixture is used up. Cover the pot and let it simmer for 10-15 minutes until the flavors are well combined.

  9. Serve hot with a raita and salad. Enjoy your delicious beef yakhni biryani!
